Bubble tea ingredients at a glance
| Ingredient | What it does | Common types |
|---|---|---|
| Tea or coffee base | Gives the drink its body and aroma | Black tea, green tea, jasmine tea, matcha, coffee |
| Milk | Makes milk teas creamy | Milk, creamer, plant milks |
| Sweetener | Balances the tea and flavours | Sugar syrup, brown sugar syrup, honey |
| Flavour | Decides what the drink tastes like | Taro, matcha, chocolate, fruit, hazelnut |
| Toppings | The fun, chewy part | Tapioca pearls, popping boba, brown sugar boba, jelly |
| Ice | Chills and dilutes to the right strength | Crushed or cubed ice |
1. The tea (or coffee) base
Most bubble teas start with brewed tea. Black tea gives classic milk tea its strong, malty taste. Green and jasmine tea are lighter and floral, and are often used for fruit teas. Matcha – stone-ground Japanese green tea – gives a smooth, earthy flavour and a bright green colour. For coffee lovers, bubble coffees use a coffee base instead of tea.
At Hooba Boba we use Japanese Kyoto matcha for our matcha drinks – read matcha explained to see why the grade of matcha matters so much.
2. Milk and creamer
Milk turns tea into milk tea. Some shops use fresh milk, some use creamer, and some offer plant milks. Milk adds creaminess and softens the bitterness of strong tea. Fruit teas usually skip milk completely, which keeps them light and refreshing – see fruit tea vs milk tea.
3. Sweeteners
Bubble tea is usually sweetened with sugar syrup, because it mixes easily into cold drinks. Brown sugar syrup gives a deep, caramel-like taste and is used to make brown sugar boba. Most shops let you choose how sweet you want your drink.
Good news for people who watch their sugar: sugar-free bubble teas are coming soon at Hooba Boba, sweetened with monk fruit and allulose (no erythritol). Read is bubble tea healthy? for tips on ordering a lighter cup.
4. Flavours: powders, fruit and syrups
The flavour is what makes a taro bubble tea purple and a mango bubble tea golden. Flavours come from bubble tea powders (taro, matcha, chocolate, milk tea), real fruit and fruit purées, and syrups (hazelnut, vanilla, caramel). This is where quality makes the biggest difference: a cheap powder tastes flat and artificial, while a premium one tastes rich and natural.

That is why Hooba Boba selects premium materials imported from Taiwan, China and Japan and uses its own formulations. We are best known for our Taro, Hazelnut and Matcha drinks.
5. Toppings: what are tapioca pearls and popping boba made of?
Tapioca pearls
Tapioca pearls are made from tapioca starch, which comes from the cassava root – the same maravalli kizhangu grown across Tamil Nadu. The starch is mixed with water (and often brown sugar), rolled into small balls and boiled until soft and chewy. Fresh, well-cooked pearls are soft on the outside with a gentle bounce in the middle.
Popping boba
Popping boba are small balls with a thin skin and fruit juice inside. The skin is usually made with a seaweed-based ingredient (alginate), so it bursts when you bite. They are the star of fruit teas and boba sodas.
Brown sugar boba and other toppings
Brown sugar boba are tapioca pearls slow-cooked in brown sugar syrup for a rich, caramel taste. Some shops also offer jelly toppings such as coconut jelly or grass jelly. Compare them all in our guide to tapioca pearls vs popping boba vs brown sugar boba.

How bubble tea is made, step by step
- Cook the pearls – boil tapioca pearls until soft, then rest them in syrup.
- Brew the tea – make a strong tea or coffee base and cool it.
- Add milk or fruit – milk for milk teas, fruit for fruit teas.
- Add flavour and sweetener – powder, fruit or syrup, sweetened to taste.
- Shake with ice – this mixes everything and gives the drink a light foam.
- Serve – pearls or popping boba go in the cup first, the drink on top, sealed and served with a wide straw.
It looks simple, but getting the pearls perfectly soft, the tea strong and the taste the same in every cup takes practice and good ingredients. Want to learn it properly? See our bubble tea training.

Why ingredient quality changes the taste
- Taste: premium taro, matcha and hazelnut taste rich and natural; cheap powders taste flat.
- Texture: good tapioca pearls stay soft and chewy; poor pearls turn hard or mushy.
- Consistency: using the same quality ingredients and formulations means every cup tastes the same.
- Colour and aroma: real matcha is a bright, fresh green and smells grassy and sweet.
